In a medium saucepan, combine the heavy cream, whole milk, half of the sugar, and salt. Heat the mixture over medium heat until it is warm but not boiling.

Cook the Mixture
Cook the mixture over medium heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 170°F or 77°C). Do not let it boil.
