Make the Meatballs
Preheat the oven to 400°F (200°C). In a large bowl, combine ground beef, Italian breadcrumbs, grated Parmesan cheese, egg, minced garlic, chopped parsley, salt, and black pepper. Mix until just combined. Form mixture into meatballs, about 1.5 inches in diameter.

Bake the Meatballs
Place meatballs on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until cooked through and browned.

Heat the Marinara Sauce
While the meatballs are baking, heat marinara sauce in a saucepan over medium heat until warmed through.

Assemble the Sandwiches
Cut hoagie rolls in half and place them on a baking sheet. Place a few meatballs in each roll, spoon marinara sauce over the meatballs, and top with roasted red peppers and shredded mozzarella cheese.

Toast the Sandwiches
Place the assembled sandwiches back in the oven for 5-7 minutes or until the cheese is melted and the rolls are toasted.

Remove from the oven, let cool slightly, and serve the meatball sandwiches warm.
