1. Prepare the Shrimp

Rinse the butterflied shrimp and pat them dry with paper towels.

2. Set Up the Breading Station

In one bowl, place the flour mixed with salt, black pepper, and cayenne pepper. In another bowl, whisk together the eggs and milk. In a third bowl, add the bread crumbs.

3. Bread the Shrimp

Dredge each shrimp in the flour mixture, then dip into the egg wash, and finally coat with bread crumbs. Set aside on a plate.

4. Heat the Oil

In a deep skillet or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

5. Fry the Shrimp

Carefully add the breaded shrimp to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side, or until golden brown and cooked through.

6. Drain and Serve

Remove the shrimp from the oil and drain on paper towels. Serve warm with cocktail sauce on the side.
