Prepare the Stuffing
In a skillet, heat olive oil over medium heat. Add minced garlic and chopped mushrooms, sautéing until mushrooms are tender, about 5 minutes. Stir in green onions, Italian herbs, salt, and black pepper. Cook for an additional 2 minutes. Remove from heat and let cool. Once cool, mix in shredded mozzarella and breadcrumbs until well combined.

Stuff the Pork Chops
Preheat your oven to 375°F (190°C). Using a sharp knife, create a pocket in each pork chop by slicing horizontally, being careful not to cut all the way through. Generously stuff each chop with the mushroom mixture, securing with toothpicks if necessary.

Cook the Pork Chops
In an oven-safe skillet, heat a little olive oil over medium-high heat. Sear the stuffed pork chops on both sides until golden brown, about 3-4 minutes per side. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the internal temperature reaches 145°F (63°C).
