    Prepare the Onions

    Peel the onions and slice them into 1/4-inch thick rings. Separate the rings and set them aside.

    Soak in Buttermilk

    Place the onion rings in a large bowl and cover them with buttermilk. Let them soak for at least 30 minutes.

    Make the Batter

    In a separate bowl, whisk together the flour, cornstarch, baking powder, salt, black pepper, paprika, and garlic powder.

    Heat the Oil

    In a deep fryer or a large heavy pot, heat the vegetable oil to 350°F (175°C).

    Coat the Onion Rings

    Remove the onion rings from the buttermilk, allowing excess to drip off. Dredge the rings in the flour mixture until fully coated.

    Fry the Onion Rings

    Carefully place a few coated onion rings into the hot oil. Fry until golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels.
