Roasting the Meat
Place the seasoned prime rib on a roasting rack in a baking pan. Roast in the preheated oven for 20 minutes to develop a crust.

Slow Roast
Reduce the oven temperature to 325°F (160°C) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare. Use a meat thermometer for accuracy.

Resting the Meat
Remove the prime rib from the oven and tent it with aluminum foil. Let it rest for at least 20 minutes before slicing.

Making the Au Jus
While the meat rests, place the baking pan with drippings on the stovetop over medium heat. Add beef broth and scrape up any browned bits from the bottom of the pan. Simmer for about 10 minutes, then strain the liquid to serve as au jus.

Serving
Slice the prime rib into 8 oz portions and serve with au jus on the side.
