    Prepare the Prime Rib

    Preheat your oven to 225°F (107°C). In a small bowl, mix together salt, black pepper, garlic powder, and chopped fresh rosemary. Rub the mixture all over the prime rib roast, then drizzle with olive oil.

    Roast the Prime Rib

    Place the roast on a rack in a roasting pan. Insert a meat thermometer into the thickest part of the meat. Roast in the preheated oven until the internal temperature reaches 130°F (54°C) for medium-rare, about 4 to 5 hours.

    Rest the Meat

    Once cooked, remove the prime rib from the oven and let it rest for at least 20-30 minutes before slicing. This allows the juices to redistribute.

    Make the Au Jus

    While the meat is resting, make the au jus. In a saucepan, combine beef stock, red wine, and Worcestershire sauce. Bring to a simmer and reduce for about 15 minutes.

    Serve

    Slice the prime rib into 7 oz. portions and serve with the rich beef au jus on the side.
