    Prepare the Prime Rib

    Preheat your oven to 450°F (232°C). Rub the prime rib roast with olive oil, then season generously with kosher salt, black pepper, garlic powder, rosemary, and thyme. Place the roast in a roasting pan, bone side down.

    Roast the Prime Rib

    Roast the prime rib in the preheated oven for 30 minutes. Then, reduce the temperature to 325°F (163°C) and continue roasting until the meat reaches your desired doneness (about 1.5 to 2 hours for medium rare). Use a meat thermometer to check the internal temperature (130°F/54°C for medium rare).

    Make the Au Jus

    Remove the roast from the oven and let it rest for 20 minutes. Meanwhile, pour off excess fat from the roasting pan, and place the pan over medium heat. Add beef broth and scrape the bottom of the pan to release the browned bits. Simmer until slightly thickened.

    Prepare the Seasoned Fries

    Cut the potatoes into fries and toss them with olive oil, salt, and pepper. Spread them on a baking sheet and bake at 425°F (218°C) for 25-30 minutes until golden and crispy.

    Serve

    Slice the prime rib and serve with au jus, seasoned fries, fresh baked dinner rolls, and a selection from the salad bar.
