    Prepare the Herb Mixture

    In a small bowl, combine the chopped parsley, dill, thyme, minced garlic, lemon juice, salt, and pepper. Mix well to create a herb paste.

    Season the Mahi-Mahi

    Pat the Mahi-Mahi fillets dry with a paper towel. Rub the fillets with olive oil and season with additional salt and pepper.

    Apply the Herb Mixture

    Spread the herb mixture evenly over the top of each fillet, pressing gently to adhere.

    Pan-Seer the Fillets

    Heat a large non-stick skillet over medium-high heat. Once hot, place the fillets herb-side down in the skillet. Cook for about 4-5 minutes until the herbs are golden and the fish is cooked halfway through.

    Flip and Finish Cooking

    Carefully flip the fillets and cook for an additional 3-4 minutes, or until the fish is cooked through and flakes easily with a fork.
