    Rinse the scallops under cold water and pat them dry with paper towels. This will help the breading adhere better.

    In three separate shallow dishes, place the flour in the first, beat the eggs in the second, and place the breadcrumbs mixed with salt and pepper in the third.

    Bread the Scallops

    Dredge each scallop in flour, shaking off any excess. Dip into the beaten eggs, then coat in the breadcrumb mixture. Ensure each scallop is evenly coated.

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until shimmering. You can test the oil by dropping in a small piece of bread; if it sizzles, the oil is ready.

    Fry the Scallops

    Carefully add the breaded scallops to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side, until they are golden brown and cooked through.
