Chicken and Coating
Method
Preparation and Cooking
- 1
Marinate the Chicken
In a large bowl, combine the buttermilk with salt, paprika, garlic powder, onion powder, black pepper, and cayenne pepper. Add the chicken halves, making sure they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.
- 2
Prepare the Coating
In a separate bowl, mix the all-purpose flour with a pinch of salt, paprika, garlic powder, onion powder, black pepper, and cayenne pepper.
- 3
Heat the Oil
In a large, deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 4
Coat the Chicken
Remove the chicken from the buttermilk marinade, allowing excess to drip off. Dredge each piece in the seasoned flour mixture, pressing down to ensure a good coating.
- 5
Fry the Chicken
Carefully place the coated chicken halves into the hot oil, skin side down. Fry for about 10-12 minutes until golden brown. Flip and cook for an additional 10-12 minutes until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
- 6
Drain and Serve
Remove the fried chicken from the oil and place it on a wire rack or paper towels to drain excess oil. Serve hot.
