    Prepare the Chicken

    In a large bowl, soak the halved chicken in buttermilk for at least 2 hours or overnight in the refrigerator for best results.

    Make the Breading

    In another bowl, combine the flour, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper. Mix well.

    Coat the Chicken

    Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring it is fully coated. Shake off any excess flour.

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chicken

    Carefully add the coated chicken pieces to the hot oil, skin side down. Fry in batches to avoid overcrowding the pan. Cook for about 10-12 minutes on each side or until golden brown and the internal temperature reaches 165°F (75°C).

    Drain and Serve

    Once cooked, transfer the chicken to a wire rack or paper towels to drain excess oil. Serve hot with your choice of sides.
