Method

Preparation

  1. 1

    Prepare the Tuna

Trim the bluefin tuna into a rectangular block. Season the tuna with salt and black pepper.

  2. 2

    Make the Marinade

In a bowl, whisk together soy sauce, rice vinegar, sesame oil, grated ginger, minced garlic, salt, and black pepper.

  3. 3

    Marinate the Tuna

Place the tuna in a shallow dish and pour the marinade over it. Let it marinate for 15-20 minutes.

Cooking

  1. 4

    Sear the Tuna

Heat a non-stick skillet over high heat. Add a little oil if necessary. Sear the tuna for 30-45 seconds on each side, until the outside is browned but the inside remains rare.

  2. 5

    Slice the Tuna

Remove the tuna from the skillet and let it rest for a few minutes. Slice it thinly against the grain.

Assembly

  1. 6

    Prepare the Salad

Thinly slice the cucumber and arrange it on a plate. Scatter the mixed berries around the cucumber.

  2. 7

    Plate the Tuna

Arrange the sliced tuna on top of the cucumber and berries. Drizzle any remaining marinade over the dish.

  3. 8

    Garnish

Sprinkle sesame seeds and fresh cilantro or microgreens over the top before serving.
