Prepare the Pastry Dough

    Mix the Dry Ingredients

    In a large bowl, whisk together the flour, sugar, and salt.

    Cut in Butter

    Add the cold, cubed butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

    Add Water

    Gradually add the cold water, mixing until the dough just comes together. Do not overwork the dough.

    Chill the Dough

    Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Prepare the Filling

    Combine Ingredients

    In a medium bowl, combine the fresh fruit, granulated sugar, cornstarch, cinnamon, and lemon juice. Toss gently to coat the fruit.

Assemble the Pastry

    Roll Out Dough

    Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out the chilled dough to about 1/8 inch thick.

    Cut and Fill

    Cut the rolled dough into circles or squares and place a spoonful of filling in the center of each. Fold over and seal the edges with a fork.

    Egg Wash and Sprinkle

    Beat the egg and brush it over the tops of the pastries. Sprinkle with sugar.

    Place the pastries on a baking sheet lined with parchment paper and bake for 25-30 minutes, or until golden brown.
