Method

Preparing the Beef Shoulder

    Marinate and Grill

    Rub the beef shoulder with olive oil, salt, black pepper, and garlic powder. Let it marinate for at least 30 minutes. Preheat the grill to medium-high heat and grill the beef for about 20-25 minutes, flipping occasionally until it reaches desired doneness. Let it rest before slicing.

Making the Waffles

    Prepare and Cook

    In a bowl, mix flour, baking powder, and salt. In another bowl, whisk together milk, eggs, pesto sauce, and olive oil. Combine the wet and dry ingredients until just mixed. Preheat the waffle iron and cook the batter according to the manufacturer's instructions until golden brown.

    In a skillet, melt butter over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks remain runny, about 3-4 minutes.
