Preheat your oven to 350°F (175°C) and grease a 12x17 inch jelly roll pan.

In a bowl, whisk together the flour, baking powder, cocoa powder, and salt.

In a separate bowl, beat the eggs and granulated sugar until light and fluffy. Add the vanilla extract.

In a bowl, mix together mascarpone cheese, powdered sugar, and maple syrup until smooth. In another bowl, whip the cream until soft peaks form, then fold it into the mascarpone mixture.

Once the cake is completely cool, spread the filling evenly over the surface. Roll the cake tightly from one short end to the other, using parchment paper to help.
