Making Fresh Pasta

Prepare the Dough
In a large bowl, combine the flour and salt. Make a well in the center and add the eggs. Using a fork, beat the eggs gently, then gradually incorporate the flour from the edges until a dough begins to form.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Roll Out the Dough
After resting, divide the dough into four pieces. Roll each piece out using a pasta machine or a rolling pin until thin. Cut into your desired pasta shape.

Add Cream and Cheese
Slowly pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and smooth. Season with salt and black pepper to taste.

Combine Pasta and Sauce
Cook the fresh pasta in boiling salted water for 2-3 minutes until al dente. Drain and add to the sauce, tossing to coat evenly. Serve immediately.
