Prepare the Potatoes

Peel and cube the potatoes. Boil them in salted water until tender, about 15 minutes. Drain and set aside.

Cook the Bacon

In a large skillet over medium heat, cook the bacon until crispy. Remove and let drain on paper towels. Leave some bacon fat in the skillet for cooking the potatoes.

Sauté the Potatoes

In the same skillet with bacon fat, add the boiled potatoes and sauté until golden brown. Season with salt and black pepper.

Scramble the Eggs

In a bowl, whisk together eggs, milk, salt, and pepper. Pour the mixture into the skillet and scramble until just set. Add cheese curds and chopped parsley, mixing until the cheese is slightly melted.

Plate the sautéed potatoes and top with the scrambled egg mixture. Crumble the bacon on top and serve with optional toppings if desired.
