Pork Chops and Sauce

    Prepare the Pork Chops

    Season the pork chops with salt and black pepper on both sides. In a large skillet, heat olive oil over medium-high heat and sear the pork chops for about 4-5 minutes on each side until golden brown. Remove from the skillet and set aside.

    Make the Sauce

    In the same skillet, add the diced apples and raisins, sauté for about 2-3 minutes until softened. Pour in the brandy and let it reduce for 2 minutes. Stir in the demi-glace sauce and return the pork chops to the skillet. Simmer for an additional 5-7 minutes until the pork chops are cooked through and the sauce thickens.

Mashed Potatoes

    Cook the Potatoes

    In a large pot, boil the cubed potatoes in salted water until fork-tender, approximately 15-20 minutes. Drain and return to the pot.

    Mash the Potatoes

    Add milk, butter, salt, and black pepper to the drained potatoes. Mash until smooth and creamy. Set aside.

Vegetables

    Prepare the Vegetables

    In a separate skillet, heat olive oil over medium heat. Add mixed vegetables, season with salt and pepper, and sauté for about 5-7 minutes until tender.

Plating

    Serve the Dish

    On a plate, serve the pork chops topped with the apple-raisin demi-glace sauce alongside a generous scoop of mashed potatoes and a portion of sautéed vegetables.
