Prepare the Dough

    Cook the Potatoes

    Boil the Russet potatoes with their skins on until fork-tender, about 30-40 minutes. Drain and let cool slightly.

    Make the Dough

    Peel the potatoes and mash them until smooth. Spread the mashed potatoes on a clean work surface and let them cool completely. Create a well in the center and add the flour, egg, and salt. Mix together until a dough forms.

    Knead and Shape

    Knead the dough gently until smooth, then divide it into 4 sections. Roll each section into a long rope about 1/2 inch thick. Cut the ropes into 1-inch pieces to form the gnocchi.

Cook the Gnocchi
