Preparation and Assembly

    Poach the Pears

    In a saucepan, combine red wine and a pinch of salt. Bring to a gentle simmer. Peel and core the pears, then add them to the simmering wine. Poach for about 20 minutes or until tender. Remove the pears and let them cool. Slice thinly.

    Preheat your oven to 475°F (245°C) or according to your pizza dough instructions.

    Prepare the Dough

    Roll out the pizza dough on a floured surface to your desired thickness. Transfer the dough to a pizza stone or baking sheet lined with parchment paper. Drizzle olive oil over the dough and season with salt and pepper.

    Layer the sliced poached pears evenly over the prepared dough. Add the prosciutto slices, followed by crumbled gorgonzola and blue cheese. Sprinkle the toasted walnuts over the top.
