    Bring a large pot of salted water to a boil. Add the linguini and cook according to package instructions until al dente. Reserve 1 cup of the pasta water, then drain the pasta.

    In a large skillet over medium heat, add the olive oil and pancetta (or guanciale). Cook until the meat is crispy, about 5-7 minutes. Add the minced garlic and cook for an additional minute until fragrant.

    In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.
