Cheese Preparation

Heating the Milk
In a large pot, heat the whole milk and heavy cream over medium heat until it reaches 85°F (29°C). Stir gently to prevent scorching.

Adding Vinegar and Salt
Remove from heat and stir in the white vinegar and salt. Allow the mixture to sit for 5 minutes to curdle.

Inoculating the Curd
Sprinkle the Penicillium roqueforti culture over the curds and gently stir to incorporate. Let it rest for 30 minutes.

Adding Rennet
Dissolve rennet in a small amount of cool, non-chlorinated water. Stir the rennet into the curds gently and let it sit undisturbed for 1 hour until it sets.

Cutting the Curd
Once the curd is set, cut it into small cubes (about 1 inch) and let it rest for 5 minutes.

Cooking the Curd
Gently heat the curds to 100°F (38°C) while stirring gently for 30 minutes. This helps to expel whey.

Draining the Curds
Scoop the curds into a cheese mold lined with cheesecloth and press gently. Allow it to drain for 6-12 hours in the refrigerator.

Salting and Aging
Once drained, remove from the mold and rub salt on the exterior. Let the cheese age in a cool place for at least 3-4 weeks, flipping it regularly.

Once the cheese has developed a blue mold and a tangy flavor, it's ready to enjoy. Store in the refrigerator.
