Prepare the Roasted Garlic Aioli
In a bowl, mash the roasted garlic cloves and mix them with the mayonnaise. Season with salt and pepper to taste. Set aside.

Prepare the Salmon
In a bowl, combine all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add cold water to create a smooth batter.

Fry the Salmon
Heat oil in a deep pan over medium heat. Dip each salmon fillet into the batter, allowing excess to drip off, then carefully place in the hot oil. Fry for about 4-5 minutes on each side or until golden brown. Remove and drain on paper towels.

Cook the Bacon
In a skillet, cook the applewood bacon over medium heat until crispy. Remove and drain on paper towels.

Assemble the Sandwich
Toast the Texas toast slices until golden brown. On the bottom slice, layer lettuce, fried salmon, bacon, and tomato slices. Spread a generous amount of roasted garlic aioli on the top slice and place it on top to complete the sandwich.

Serve the Salmon BLT with a side of fries.
