Fries

    Prepare the Fries

    Wash and cut the Russet potatoes into fry shapes. Rinse them in cold water and soak for 30 minutes. Drain and pat dry.

    Fry the Potatoes

    In a large pot, heat vegetable oil to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, then sprinkle with salt.

Mac and Cheese

    Cook the Macaroni

    Boil macaroni according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce

    In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk. Once thickened, stir in cheese, salt, and pepper until smooth.

    Combine

    Mix the cooked macaroni with the cheese sauce until well coated.

Collard Greens

    Sauté the Vegetables

    In a large pot, heat olive oil over medium heat. Add onion and garlic, cooking until softened.

    Cook the Collards

    Add chopped collard greens and chicken broth. Season with salt and pepper. Simmer for about 30 minutes until tender.

Pulled Pork

    Prepare the Pork

    Rub pork shoulder with BBQ seasoning and salt. Place in a slow cooker with apple cider vinegar.

    Cook the Pork

    Cook on low for 8 hours or until the pork is tender and easily shredded.

Bourbon BBQ Sauce

    Make the Sauce

    In a saucepan, combine ketchup, brown sugar, bourbon, apple cider vinegar, Worcestershire sauce, garlic powder, and salt. Bring to a simmer and cook for 15 minutes.

Assembly

    Assemble the Rickhouse Fries

    On a plate, layer the fries, followed by mac and cheese, sautéed collard greens, pulled pork, and drizzle with bourbon BBQ sauce.
