Prepare the Crust
In a mixing bowl, combine chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a greased springform pan to form the crust.

Make the Cheesecake Filling
In another bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and half of the chocolate chips.

Layer the Filling
Pour half of the cheesecake mixture over the crust. Drizzle half of the caramel sauce and sprinkle half of the chopped nuts on top. Pour the remaining cheesecake mixture over that, then repeat the caramel and nuts layering.

Bake the Cheesecake
Preheat your oven to 325°F (160°C). Bake the cheesecake for about 50-60 minutes or until the center is set. Remove from the oven and let it cool.

Prepare the Chocolate Cream
In a saucepan, heat heavy cream until it begins to simmer. Remove from heat, add remaining chocolate chips, and stir until melted and smooth.

Assemble the Eruption
Once the cheesecake has cooled, pour the chocolate cream over the top. Allow it to set in the refrigerator for at least 2 hours.

Serve
Remove from the springform pan, slice, and serve drizzled with additional caramel sauce and topped with additional chopped nuts if desired.
