    Prepare the Vegetables

    Slice the onion, poblano pepper, bell pepper, yellow squash, and mushrooms into thin strips. Set aside.

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add the sliced onion and sauté for 2-3 minutes until translucent. Add the poblano pepper, bell pepper, mushrooms, and yellow squash. Sauté for another 5-7 minutes until the vegetables are tender. Add the pineapple chunks and season with salt and black pepper. Cook for another 2 minutes. Remove from heat.

    Assemble the Quesadillas

    On one half of each tortilla, spread a layer of the sautéed vegetable mixture and top with shredded cheese. Fold the tortilla in half to cover the filling.

    Cook the Quesadillas

    In the same skillet, add a little more olive oil if needed and place the folded quesadillas in the skillet. Cook for 3-4 minutes on each side until golden brown and the cheese is melted.

    Serve

    Cut the quesadillas into wedges and serve with guacamole salad on the side.
