    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent. Stir in the shredded chicken and cooked ground beef, season with salt and pepper, and cook for 5 more minutes. Remove from heat.

    Prepare the Tortillas

    In a separate pan, lightly warm the corn tortillas in a dry skillet until pliable, about 30 seconds on each side.

    Assemble the Enchiladas

    Spread a small amount of enchilada sauce on the bottom of a baking dish. Take a tortilla, fill it with a spoonful of the meat mixture, and a sprinkle of shredded cheese. Roll it up and place seam side down in the baking dish. Repeat with remaining tortillas.

    Add Sauce and Cheese

    Once all enchiladas are in the dish, pour the remaining enchilada sauce over them and top with the remaining shredded cheese.

    Bake

    Preheat the oven to 350°F (175°C). Bake the enchiladas for about 20-25 minutes or until the cheese is bubbly and golden.

    Serve

    Let cool for a few minutes. Serve with sour cream and garnish with chopped cilantro.
