Prepare the Beans
In a skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent. Stir in cooked black beans, salt, ground cumin, and ground black pepper. Cook for 5 minutes, then remove from heat.

Assemble the Burrito
Place half of the bean mixture in the center of a flour tortilla. Add a quarter cup of cooked Spanish rice and a tablespoon of chopped cilantro. Roll the tortilla tightly to form a burrito.

Prepare the Enchilada
Spread a little enchilada sauce on the bottom of a baking dish. Place the burrito seam-side down in the dish. Pour the remaining enchilada sauce over the burrito and sprinkle with shredded cheddar cheese.

Bake
Preheat the oven to 350°F (175°C). Bake the burrito with enchilada sauce and cheese for 15-20 minutes until the cheese is melted and bubbly.

Serve
Remove from the oven, garnish with additional chopped cilantro if desired, and serve with the remaining Spanish rice and beans.
