    Prepare the Filling

    In a large skillet, heat olive oil over medium heat. Add the sliced onions and sauté until translucent.

    Add Vegetables

    Add the diced poblano pepper, bell pepper, mushrooms, yellow squash, and pineapple to the skillet. Cook for about 5-7 minutes until the vegetables are tender.

    Season the Mixture

    Stir in the taco seasoning and mix well. Cook for an additional 2-3 minutes to combine the flavors. Remove from heat.

    Assemble the Enchiladas

    Preheat your oven to 375°F (190°C). Take a tortilla, place a generous amount of the vegetable filling in the center, and roll it up tightly. Place seam side down in a greased baking dish. Repeat with remaining tortillas.

    Top with Cheese

    If using, sprinkle shredded cheese on top of the rolled enchiladas.

    Bake

    Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.

    Serve hot with guacamole salad on the side.
