    Prepare the Vegetables

    In a skillet, heat olive oil over medium heat. Add diced onion, poblano pepper, bell pepper, mushrooms, and yellow squash. Sauté until vegetables are tender, about 5-7 minutes. Season with salt, black pepper, and cumin.

    Add Pineapple

    Stir in the diced pineapple and cook for an additional 2-3 minutes, allowing the flavors to combine. Remove from heat.

    Assemble the Burritos

    Warm the flour tortillas in a separate skillet for about 30 seconds on each side. Spoon the vegetable and pineapple mixture onto the center of each tortilla. Add a generous scoop of guacamole, followed by shredded lettuce and diced tomato.

    Wrap the Burritos

    Fold the sides of the tortilla over the filling, then roll from the bottom up to form a burrito. Repeat with the remaining tortillas and filling.

    Cut the burritos in half and serve with additional guacamole and salad on the side.
