    Prepare the Beans

    Rinse the pinto beans under cold water and soak them in water for at least 4 hours or overnight.

    Cook the Bacon

    In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.

    Sauté the Aromatics

    In the same pot, add diced onion and sauté until translucent. Add minced garlic and cook for another minute.

    Add Tomatoes and Jalapeño

    Dice the tomatoes and jalapeño pepper, then add to the pot. Cook for 5 minutes until softened.

    Add Beans and Water

    Drain the soaked beans and add them to the pot along with 8 cups of fresh water. Bring to a boil.

    Simmer the Soup

    Reduce heat to low, cover, and let the soup simmer for about 1 hour, or until the beans are tender.

    Add Sausage and Chicharron

    Stir in the pork sausage and chicharron, then continue to simmer for another 15 minutes.

    Season the Soup

    Season with salt and black pepper to taste. Remove from heat.

    Ladle the soup into bowls, garnish with chopped cilantro and a squeeze of lime juice before serving.
