Preheat Oven
Preheat your oven to 375°F (190°C).

Prepare Filling
In a large skillet, heat olive oil over medium heat. Add shredded beef or pork carnitas, season with salt and black pepper, and sauté until warmed through.

Assemble Enchiladas
On a flat surface, take a corn tortilla, add a scoop of the meat filling, roll it up tightly, and place it seam-side down in a baking dish. Repeat with the remaining tortillas and filling.

Add Sauce and Cheese
Pour the green enchilada sauce over the rolled enchiladas, covering them evenly. Sprinkle shredded cheese on top.

Bake Enchiladas
Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.

Garnish and Serve
Remove from oven, garnish with sour cream and fresh cilantro. Serve hot.
