Prepare the Tortillas
In a skillet, heat the vegetable oil over medium heat. Lightly fry each corn tortilla for about 10 seconds on each side until soft. Remove and drain on paper towels.

Fill the Tortillas
In the center of each tortilla, place a portion of shredded chicken, shredded beef, or cheese. Roll the tortilla tightly and place it seam-side down in a baking dish.

Add Sauce and Bake
Once all tortillas are filled and placed in the dish, pour the red enchilada sauce evenly over the top. Sprinkle with additional shredded cheese if desired.

Bake
Preheat the oven to 350°F (175°C) and bake for 20-25 minutes, or until the cheese is bubbly and golden.

Serve
Remove from the oven, let cool slightly, and serve topped with sour cream, chopped cilantro, and chopped onion.
