    Prepare the Chalupa

    In a skillet, heat olive oil over medium heat. Add ground beef or turkey, seasoning with salt and pepper, and cook until browned. Drain excess fat.

    Assemble the Chalupa

    In a separate pan, lightly fry the corn tortillas until crispy. Spread a layer of refried beans on each tortilla, followed by the cooked meat. Top with shredded lettuce, diced tomatoes, shredded cheese, and jalapeños. Set aside.

    Prepare the Chile Relleno

    Roast the poblano peppers until the skin is charred. Place them in a plastic bag for 10 minutes to steam, then peel the skin off. Stuff each pepper with a mixture of beaten eggs and shredded cheese.

    Cook the Chile Relleno

    In a skillet, heat olive oil over medium heat. Dip the stuffed peppers in flour, then in the beaten egg mixture. Fry until golden brown on all sides. Remove and drain on paper towels.

    Prepare the Rice and Beans

    While the chalupa and chile relleno are cooking, prepare Spanish rice according to package instructions. Heat canned or homemade beans in a saucepan.

    On a plate, serve the chalupa alongside the chile relleno, Spanish rice, and beans.
