Method

Tart Crust

1

Prepare the crust

In a mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the cold, diced unsalted butter and mix until the mixture resembles coarse crumbs.

2

Add wet ingredients

Stir in the egg yolk and vanilla extract until the dough comes together. If too crumbly, add a teaspoon of cold water as needed.

3

Chill the dough

Press the dough into a 9-inch tart pan evenly across the bottom and up the sides. Prick the bottom with a fork and chill in the refrigerator for 30 minutes.

4

Pre-bake the crust

Preheat the oven to 350°F (175°C). Bake the crust for 15 minutes, then remove and let cool slightly.

Apple Filling

5

Prepare the apple filling

In a large bowl, toss the sliced apples with brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch until well coated.

6

Fill the tart

Pour the apple filling into the pre-baked tart crust, spreading evenly.

Crumb Topping

7

Make the crumb topping

In a separate bowl, mix the all-purpose flour, oats, brown sugar, and salt. Pour in the melted butter and stir until crumbly.

8

Top the tart

Sprinkle the crumb topping evenly over the apple filling.

9

Bake the tart

Return the tart to the oven and bake for an additional 25-30 minutes, or until the topping is golden brown and the apples are tender.

Citrus Caramel

10

Prepare the caramel

In a saucepan over medium heat, melt the granulated sugar until it turns a deep amber color, stirring occasionally.

11

Add cream and butter

Remove from heat and carefully whisk in the heavy cream and butter until smooth.

12

Add zest and salt

Stir in the orange zest, lemon zest, and salt. Allow to cool slightly before drizzling over the tart.
