    Prepare the Broth

    In a large pot, bring the chicken or vegetable broth to a boil. Add the chopped lemongrass, sliced Thai ginger, and kaffir lime leaves. Let it simmer for about 10 minutes to infuse the flavors.

    Add Vegetables and Protein

    Add the sliced onion, mushrooms, and quartered tomatoes to the pot. If using chicken, beef, or tofu, cut them into bite-sized pieces and add them to the broth. If using shrimp, reserve it for later.

    Season the Soup

    Stir in the fish sauce, chili paste, salt, and pepper to taste. Let the soup simmer for another 5-10 minutes until the protein is cooked through.

    Finish with Fresh Ingredients

    If using shrimp, add it now and cook for an additional 2-3 minutes until pink and opaque. Stir in the lemon juice and chopped cilantro just before serving.

    Serve

    Ladle the soup into bowls and enjoy hot, garnished with additional cilantro if desired.
