Prepare the Protein

In a skillet over medium heat, add 1 tablespoon of vegetable oil. Cook your choice of chicken, beef, tofu, or shrimp until fully cooked. Remove from skillet and set aside.

Make the Sauce

In the same skillet, add the remaining tablespoon of vegetable oil. Sauté minced garlic and grated ginger until fragrant, about 1 minute.

Combine Ingredients

Stir in the coconut milk, peanut butter, soy sauce, and curry powder. Mix until well combined and heated through.

Add Spinach

Fold in the spinach and cook until wilted, about 2-3 minutes.

Combine with Protein

Return the cooked protein to the skillet, stirring to coat with the sauce. Season with salt to taste.

Serve

Serve hot over rice or noodles, and enjoy your sweet and savory Ta-Po curry!
