Prepare the Chicken

In a bowl, mix soy sauce, minced garlic, ginger, salt, and pepper. Marinate the chicken thighs in this mixture for at least 30 minutes.

Make the Peanut Sauce

In a saucepan, combine peanut butter, coconut milk, lime juice, brown sugar, and a pinch of salt. Cook over medium heat, stirring until smooth and heated through. Set aside.

Skewer the Chicken

Thread the marinated chicken thighs onto skewers.

Cook the Chicken

Grill or pan-fry the skewered chicken thighs over medium-high heat for about 6-8 minutes on each side, or until cooked through.

Prepare the Cabbage Bed

Shred the cabbage and place it on a serving plate.

Place the cooked chicken satay on the bed of cabbage and drizzle with peanut sauce.
