Cooking Instructions

  1. 1

    Prepare the Meat

Season the flank steak (or chicken or shrimp) with salt, black pepper, cumin, and oregano. In a large skillet, heat olive oil over medium-high heat and sear the meat until browned on all sides. Remove from the skillet and set aside.

  2. 2

    Sauté the Vegetables

In the same skillet, add diced onion, green bell pepper, and minced garlic. Sauté until the vegetables are tender, about 5 minutes.

  3. 3

    Cook the Meat

Return the seared meat to the skillet, add 1 cup of water, cover, and simmer for about 1 hour (for flank steak) or 20 minutes (for chicken) until the meat is tender. If using shrimp, cook until they are pink and opaque, about 5-7 minutes.

  4. 4

    Prepare the Rice and Beans

While the meat is cooking, rinse the basmati rice under cold water until the water runs clear. Cook according to package instructions. Heat the black beans in a separate saucepan until warmed through.

  5. 5

    Fry the Plantains

Peel the sweet plantains and slice them diagonally. In a skillet, heat a bit of oil over medium heat and fry the plantain slices until golden brown on both sides. Remove and drain on paper towels.

  6. 6

    Assemble the Dish

Once cooked, shred the flank steak (or chicken) using two forks and mix it with the sautéed vegetables. Serve the meat over a bed of basmati rice with black beans on the side and fried plantains for a complete meal.
