Prepare the Plantains

Preheat your oven to 400°F (200°C). Peel the plantains and cut them in half lengthwise, then slice each half into smaller pieces.

Season the Plantains

In a bowl, toss the plantain pieces with olive oil, salt, and black pepper until evenly coated.

Roast the Plantains

Spread the seasoned plantains on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes, turning halfway through, until golden brown and tender.

Prepare the Toppings

While the plantains are roasting, prepare the toppings by mixing the black beans, red onions, cilantro, and roasted corn in a bowl.

Assemble the Dish

Once the plantains are roasted, remove them from the oven. Serve the roasted plantains topped with the black bean mixture and a generous dollop of garlic yogurt.
