Preparation Steps
Caramelize the Peaches
Cut the peaches in half, remove the pit, and slice each half into wedges. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the peach wedges and cook for about 3-4 minutes on each side, or until caramelized and golden brown. Remove from the heat and set aside.
Prepare the Salad Base
Wash and dry the radicchio. Tear the leaves into bite-sized pieces and place them in a large salad bowl. Halve the cherry heirloom tomatoes and add them to the bowl.
Make the Dressing
In a small bowl, whisk together the remaining tablespoon of olive oil, balsamic vinegar, honey, salt, and black pepper until well combined.
Assemble the Salad
Add the caramelized peaches to the salad bowl. Tear the burrata into pieces and scatter it over the salad. Drizzle the dressing over the top and gently toss to combine.
Garnish and Serve
