Prepare the Chicken

Preheat the oven to 400°F (200°C). In a bowl, mix turmeric, olive oil, minced garlic, lemon juice, salt, and black pepper. Rub this mixture all over the half chicken, making sure to get under the skin.

Roast the Chicken

Place the chicken skin-side up on a roasting pan. Roast in the preheated oven for about 40-45 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown.

Prepare the Rice

While the chicken is roasting, rinse the basmati rice under cold water until the water runs clear. In a pot, bring 2 cups of water to a boil. Add the rinsed rice and salt, reduce the heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit covered for 5 minutes.

Cook the Spring Vegetables

In a pan, heat 2 tablespoons of olive oil over medium heat. Add the asparagus, zucchini, and cherry tomatoes. Season with salt and black pepper. Sauté for about 7-10 minutes, or until the vegetables are tender but still crisp.

Serve

Fluff the rice with a fork and serve it on plates. Place the roasted chicken and sautéed vegetables on top. Enjoy your Half Roasted Chicken a la Turmeric!
