Prepare the Cream Mixture
In a medium saucepan, heat the heavy cream and split vanilla bean over medium heat until it just begins to simmer. Remove from heat and let it steep for 15 minutes.

Mix Egg Yolks and Sugar
In a mixing bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until the mixture is smooth and pale.

Combine Mixtures
Slowly pour the warm cream mixture into the egg yolk mixture, whisking constantly to prevent curdling. Remove the vanilla bean, scraping the seeds back into the mixture.

Strain the Custard
Strain the mixture through a fine-mesh sieve into a large measuring cup to ensure a smooth custard.

Bake
Bake in the preheated oven for 30-35 minutes, or until the custards are just set but still slightly wobbly in the center.

Chill
Remove the ramekins from the water bath and let them cool to room temperature, then refrigerate for at least 2 hours or overnight.

Caramelize the Sugar
Before serving, sprinkle a thin layer of brown sugar on top of each custard. Use a kitchen torch to caramelize the sugar until it’s golden brown and bubbly.

Allow the caramelized sugar to cool for a minute, then serve immediately.
