    Cook the Farro

    In a large pot, bring 3 cups of water to a boil. Add the farro and a pinch of salt. Reduce heat to a simmer and cover. Cook for about 25-30 minutes or until tender. Drain any excess water and set aside.

    Prepare the Vegetables

    While the farro is cooking, prepare the vegetables. Wash and chop the broccoli, bell pepper, carrot, zucchini, and snow peas as needed.

    Stir-fry the Vegetables

    In a large skillet or wok, heat the olive oil over medium-high heat. Add minced garlic and sauté for about 30 seconds until fragrant.

    Add the Vegetables

    Add the prepared vegetables (broccoli, bell pepper, carrot, zucchini, and snow peas) to the skillet. Stir-fry for about 5-7 minutes until they are tender-crisp.

    Combine with Farro

    Add the cooked farro to the skillet with the vegetables. Pour in the soy sauce and sesame oil. Stir well to combine and heat through for another 2-3 minutes.

    Season with salt and black pepper to taste. Remove from heat, top with sliced green onions and sesame seeds for garnish. Serve warm.
