Preparation

    Prepare the Filling

    In a pan, heat 2 tablespoons of olive oil over medium heat. Add diced onion and cook until translucent, around 3-4 minutes. Add fresh spinach and cook until wilted. Season with salt and black pepper. Allow to cool slightly.

    Assemble the Ravioli

    Take a ravioli wrapper, place a small spoonful of the spinach mixture in the center, and fold over to seal. Use a fork to crimp the edges. Repeat until all wrappers are filled.

    Prepare for Frying

    Set up a breading station: place flour in one bowl, beaten egg in another, and breadcrumbs in a third bowl.

    Bread the Ravioli

    Dredge each ravioli in flour, dip into the egg, and then coat with breadcrumbs. Set aside on a plate.

    Fry the Ravioli

    In a deep skillet, heat the remaining olive oil over medium-high heat. Fry the ravioli in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

    Grill the Cherry Tomatoes

    In the same pan, add cherry tomatoes and grill until blistered, about 5 minutes. Remove and set aside.

    In a dry skillet, toast pine nuts over medium heat until golden and fragrant, about 2-3 minutes. Watch closely to avoid burning.

    On a serving plate, arrange the fried ravioli. Top with grilled cherry tomatoes, toasted pine nuts, and drizzle with San Marzano tomato sauce. Garnish with crispy basil leaves.
