Shrimp Po Boy
Method
Cooking Instructions
- 1
Prepare the Shrimp
In a bowl, soak the shrimp in buttermilk for at least 30 minutes.
- 2
Mix the Coating
In a separate bowl, combine the flour, cornmeal, cajun seasoning, salt, and black pepper.
- 3
Coat the Shrimp
Remove the shrimp from the buttermilk, allowing excess to drip off. Dredge each shrimp in the flour mixture until fully coated.
- 4
Fry the Shrimp
In a large skillet, heat vegetable oil over medium-high heat. Fry the shrimp in batches until golden brown and cooked through, about 2-3 minutes per side. Drain on paper towels.
- 5
Assemble the Po Boy
Split the French bread or rolls lengthwise. Layer with shredded lettuce, sliced tomatoes, and the fried shrimp. Drizzle with remoulade sauce.
- 6
Serve
Serve the shrimp po boy sandwiches immediately with sweet potato fries on the side.
