1. Prepare the Oysters
Preheat the oven to 400°F (200°C). Carefully shuck the oysters and place them on a baking sheet. Reserve the oyster shells.
2. Make the Filling
In a skillet, melt the butter over medium heat. Add the shallots and garlic, sautéing until soft. Stir in the spinach, parsley, and white wine. Cook until the spinach is wilted, about 2-3 minutes.
3. Combine Ingredients
Remove the skillet from heat and stir in the breadcrumbs, Parmesan cheese, black pepper, salt, and lemon juice until well combined.
4. Stuff the Oysters
Spoon the filling generously onto each oyster, pressing it down slightly.
5. Bake
Bake the stuffed oysters in the preheated oven for about 10-12 minutes, or until the topping is golden and bubbly.
