1. Roast the Peppers

Preheat your oven to 400°F (200°C). Cut the bell peppers in half lengthwise and remove the seeds. Place them cut-side up on a baking sheet.

2. Prepare the Garlic

Mince the garlic cloves and sprinkle them over the peppers. Drizzle the olive oil over the top and season with salt and black pepper.

3. Bake the Peppers

Roast the peppers in the preheated oven for about 25-30 minutes until they are tender and slightly charred.

4. Add Anchovies and Mozzarella

Remove the peppers from the oven. Place 2 anchovy fillets in each pepper half and add pieces of fresh mozzarella on top.

5. Final Bake

Return the stuffed peppers to the oven and bake for an additional 10-15 minutes until the mozzarella is melted and bubbly.

6. Garnish and Serve

Remove from the oven, garnish with fresh basil leaves, and serve warm.
