    Prepare the Vegetables

    Wash and chop the broccoli, spinach, and mushrooms. Dice the plum tomatoes and onion. Mince the garlic cloves. Roughly chop the basil and parsley.

    Sauté the Base

    In a large skillet, heat a tablespoon of olive oil over medium heat. Add the onions and garlic, sautéing until the onions are translucent.

    Add Vegetables

    Add the broccoli florets and mushrooms to the skillet, cooking for about 5 minutes until they start to soften.

    Incorporate Spinach and Tomatoes

    Stir in the spinach and diced plum tomatoes, cooking until the spinach wilts and the tomatoes soften.

    Add Stock and Herbs

    Pour in 1 cup of vegetable stock and add the chopped basil and parsley. Stir well and let simmer for 5-7 minutes.

    Finish and Serve

    Remove from heat, sprinkle with grated Romano cheese, season with salt and pepper to taste, and serve warm.
